At Oaklands Country Manor, over the past few years, we have been researching, plotting and planning how to create a way of living that is truly regenerative for our community as well as our guests.
The modern food industry is destroying eco-systems, social systems, and naturally bio-diverse environments. The heavily processed food that comes from this industry leaves people feeling toxic and unwell. This, in turn, is leading to greater illness and disease. In an attempt to make us well again, the pharmaceutical companies create drugs to combat bacteria that have become lethally resistant and wreak havoc on our gut health and immunity.
We believe that by taking responsibility for the creation, cultivation and processing of our food, we have an opportunity to make a difference to the quality of our health, our environment and our community.
By sharing our energy, environment and the bounty of it, we hope to inspire and influence others to live more consciously.

We believe that working with the principals of regeneration, on all levels, is necessary in order to contribute in a meaningful way to the future.
Permaculture or regenerative agriculture is a philosophy, which sets out to work with nature as opposed to working against natures natural systems. It is an ethical practice that also has a keen awareness for the need to pay attention to ‘people care’ an unhappy community dynamic can be very disruptive and unproductive. The ethic of ‘people care’ can be used to create a vibrant, healthy and productive community and landscape.
Once a regenerative farm is fully functioning, in principle nothing needs to be brought into the system as it supplies most of its own requirements. It is a regenerative system that creates abundance by embracing natural principals and enhancing their potential.
In 2015 the Oaklands family embarked on a twenty year permaculture design project, this is a continued work in progress, the fruits of which can be seen in the gardens in front of the main house, the vegetable gardens, which supply the hotel restaurant and The Cultured Whey production kitchen, the medicinal herb gardens, the development of the paddocks for livestock as well as the food gardens in the Oaklands village.
It will take years of thoughtful application to be operating at optimum capacity but the farm is well on its way to becoming a sustainable reality.
Vermiculture is the process of using a specific type of worm to decompose organic food and farming waste, turning the waste into a mineral, enzyme and nutrient rich material capable of sustaining healthy plant growth.
This method is simple, effective, convenient, and noiseless. It saves water, energy, landfills, and helps rebuild the soil health.
We have been using the vermiculture system since 2008, the results of which can be seen by the glorious bounty coming out of the vegetable gardens. The entire property is 100% chemical free, something we are very proud of, Kathy’s incredible naturally fermented ‘EM’ (Efficient Microbes) fertilizer and vermiculture compost is used across the property and the results are obvious to see.
The Oaklands philosophy of caring for the soil microbiome as well as the human microbiome and recognising the similarity between human health and plant health based on the biomes of both the earth and its living creatures is a deeply entrenched philosophy of the Oaklands family.
Fermented Medicine Foods
Many researchers believe that supporting intestinal health and restoring the integrity of our gut health will be one of the most important goals of medicine in the 21st century. Fermented foods have been found to be one of the most important contributing factors to ultimate gut health. Sadly, it is a time- honoured process that has been largely lost in our society when we need it the most!
Our products are largely lacto-fermented – an ancient food preparation technique where milk products, vegetables, grains, fruits and meats are fermented and preserved via lacto-fermenting. Unlike modern methods of food preservation, which deaden and denature foods, lacto-fermenting enhances the nutrient value of food.
Through a process of lacto-fermentation in which natural bacteria feeds on the sugar and starch in the food creating lactic acid, fermented foods create beneficial enzymes, b-vitamins, Omega-3 fatty acids, and various strains of probiotics.
The creation of ‘The Cultured Whey’ began in Caroline’s kitchen – and has since moved to a proper production kitchen on the property. She is making Kombucha Vinegar, Beet Kvaas, Raw Organic Krauts, depending on what is available in the garden, as well as her infamous natural antibiotic, Fire Tonic. A new addition to the range is Neuro Tonic, an adaptogenic tonic made from kombucha tea, Ashwagandha, Gotu Kola and Holy Basil, which treats insomnia, chronic fatigue as well as stress-related neuroendocrine issues.

FARM TO FORK
The Oaklands Country Manor award-winning kitchen is run by Kathy. Hugely passionate about farm to table food, she sources most ingredients from their own farm and that which she does not produce she sources locally, thus maintaining a symbiotic relationship between land, people and community. The result – simple, delicious, flavourful and healthy food.
Oaklands believes that by supporting other local, ethically orientated producers, they will be helping to increase awareness of food that is grown and tended to with detail and passion.

Our hope is that guests will be able to leave Oaklands loaded up with organically grown vegetables, delicious handmade products from our kitchen, grass fed and hormone free meat from local farms, local pasture raised free range eggs, and fermented foods from our production kitchen. They will know that all their food is second to none and that their well-being is in good hands.

Good, wholesome, food made with love has been a tradition at Oakland’s for many years. By using the best ingredients and age-old recipes, we produce our own Nutty Muesli, Rusks, Aunty Joy’s Tomato Chutney, Chilli Chilli Relish and Raw Honey.
We will continue to add products to the range. The first will likely be “Kefir” sour dough breads and other healthy products made with GMO free stone ground flour.

By focussing on local and quality produce and working closely with our neighbours, we are able to provide you with a farm to fork experience using the best our area has to offer.
By supporting our ethically orientated producers, we aim to increase awareness about food that is grown and tended with detail and passion and reflect this in our restaurant and service business.
