At Oaklands, we have always been passionate about food, about the land and about health.
Over the past few years, we have been researching, plotting and planning how to create a way of living that is truly regenerative for our community as well as our guests.
The modern food industry is destroying eco-systems, social systems, and naturally bio-diverse environments. The heavily processed food that comes from this industry leaves people feeling toxic and unwell. This in turn is leading to greater illness and disease. In an attempt to make us well again, the pharmaceutical companies create drugs to combat bacteria that has become lethally resistant and wreak havoc on our gut health and immunity.
We believe that by taking responsibility for the creation, cultivation and processing of our food, we have an opportunity to make a difference to the quality of our health, the quality of our environment and the quality of our community.
The projects that we are working on to create this way of living come together in a symbiotic cycle.
Permaculture is the ethical, scientific and synchronistic design of natural systems to ensure a regenerative philosophy of living. Once a permaculture farm is fully functioning, in principle nothing needs to be brought into the system as it supplies all of its own requirements and any excess is shared. It is a regenerative system that creates abundance by embracing natural principles and enhancing their potential.
Oaklands embarked on a twenty-year permaculture design project in 2015. The seeds of this process can be observed in the creation of the garden in front of the main house, the vegetable garden that supplies the restaurant, the development of the paddocks for livestock as well as the food gardens in the village.
It will take years of thoughtful application to be operating at optimum capacity but the farm is well on its way to becoming a sustainable reality.
Vermiculture is the process of using a specific type of worm to decompose organic food waste, turning the waste into a rich material capable of supplying necessary nutrients to help sustain plant growth. This method is simple, effective, convenient, and noiseless. It saves water, energy, landfills, and helps rebuild the soil.
We have been using this process for about eight years. Our vegetable garden proves the results – as do the polo field and paddocks which are fertilized using the vermiculture compost. Kathy’s organic fermented EM (environmental microbes) rich, liquid fertilizer is a by-product of the wormery.
Fermented Medicine Foods
Many researchers believe that supporting intestinal health and restoring the integrity of our gut health will be one of the most important goals of medicine in the 21st century. Fermented foods have been found to be one of the most important contributing factors to ultimate gut health. Sadly, it is a time-honoured process that has been largely lost in our society when we need it the most!
Through a process of lacto-fermentation in which natural bacteria feeds on the sugar and starch in the food creating lactic acid, fermented foods create beneficial enzymes, b-vitamins, Omega-3 fatty acids, and various strains of probiotics.
The creation of Oaklands “Medicine Foods” began in Caroline’s kitchen – but will soon move to a proper production kitchen near the stables. She is making Kombucha Vinegar, Beet Kvaas, Raw Organic Krauts, depending on what is available in the garden, as well as her infamous natural antibiotic, Fire Tonic.
Caroline has great plans to grow this range of “medicine foods” in the belief that more and more people are looking for natural alternatives to pharmaceuticals.
Good, wholesome, food made with love has been a tradition at Oakland’s for many years. By using the best ingredients and age-old recipes, we produce our own Nutty Muesli, Rusks, Aunty Joy’s Tomato Chutney, Chilli Chilli Relish and Raw Honey.
We will continue to add products to the range. The first will likely be “Kefir” sour dough breads and other healthy products made with GMO free stone ground flour.

By focussing on local and quality produce and working closely with our neighbours, we are able to provide you with a farm to fork experience using the best our area has to offer.
By supporting our ethically orientated producers, we aim to increase awareness about food that is grown and tended with detail and passion and reflect this in our restaurant and service business.
Our hope is that guests will be able to leave the property loaded up with organically grown vegetables from our garden, delicious handmade products from our kitchen, grass fed and hormone free meat from local farms, local pasture raised free range eggs, and fermented foods from our production kitchen. They will know that all their food is second to none and that their health is in good hands.
We are extremely passionate about creating a new way of living – combining both ancient and modern proven methods to create health and well-being for ourselves, our land and our community.
